Directions:
- Slice chicken breasts and season with one packet of al pastor seasoning.
- Dice onion and place in deep Sautee pan with 1/4 cup water, cook until translucent.
- Cut pineapple into thin slices, I typically try to make them about double the size of canned tidbits.
- Add chicken & pineapple to the pan, cook on medium heat until the chicken is done.
- Measure sour cream and put in food processor or a blender, add 1/2 avocado, blend until no chunks of avocado remain.
- Add cilantro to mix and pulse until evenly disbursed through sour cream mixture.
- Fill tortilla with chicken, top with cheese, & sour cream mixture and enjoy!
