Recipe Description
This comforting Italian-inspired manicotti bake is stuffed with seasoned ground chicken, creamy ricotta, and a blend of Italian cheeses. Topped with roasted garlic pasta sauce, ground chicken, and baked until bubbly, it’s a hearty, flavor-packed dish perfect for family dinners or special occasions.
Directions:
- Preheat oven to 400 degrees.
- Bring pot of water to a boil and add manicotti, boil for 5 minutes, Strain and set aside. (Pasta will be undercooked but will finish in the pan)
- Add ricotta, four blend Italian cheese, & two scrambled eggs into a medium mixing bowl, stir until combined.
- Cook ground chicken on medium heat until done, add jar of pasta sauce and remove from heat.
- Stuff manicotti with cheese and egg mixture. (I used a modified turkey baster to fill the pasta (hint: I cut off the end to make the opening bigger))
- Line a 9" by 13" pan being sure to place the ends of the manicotti against the wall of the pan or against another stuffed tube. (This helps to keep the cheese inside the manicotti while baking
- Pour ground chicken & pasta sauce mixture over the top of the stuffed manicotti, ensuring they're coated evenly.
- Evenly spread shaved Parmesan over the top and cover with foil.
- Cook on middle rack for 30 minutes, remove foil and allow to bake for another 10 minutes.
- Remove from oven, let cook for 10-15 minutes & serve.
